Ice cream making would not have been possible without ICE. So how did we get ice? This is the story not only of ice houses but of the extraordinary trade in frozen water across the globe that enabled us to keep our food fresh and our drinks cool, as well as making ice cream. My title is taken from the title of the last book written by the great cookery writer Elizabeth David, who knew a thing or two about food and its preservation . It is more interesting than it sounds – trust me!
